5The only mandoline you'll ever need  Nov 29, 2007 By Shaz "oi-you!"
My husband bought me this mandoline for our anniversary. I've never used anything like it!. What makes this deBuyer model different from other mandolines? First off, the unqiue angle. Most mandolines force you to shift your shoulder to cut food, but this model is slanted in such a way that you can cut at a natural angle (it adjusts for right or left handed people). The second feature is the v-shaped blade, which really does cut into food easier than a straight blade. Used properly, you can create julienne, straight cut, waffle cut, or cubed foods.

The set comes with a flat edge blade, a crinkle cut clade, and 3 julienne blades. It comes in a case that (seriously) looks like an assassins case, with slots for everything for careful storage. Definitely worth the extra money. Also comes with a DVD to cover safety and manual instructions. The only drawback here is the crank used to alter the thickness of the slices; it doesn't have a knob, which makes it harder to work. Still, this is the only mandoline you'll ever need or want.

Excellent quality ! VERY SHARP. I told my wife right after opening the awesome storage case the 1st time that the blades were EXTREMELY sharp, like a razor. Within 5 minutes, i was bleeding all over the place ! Idiot.. I reached into the case, not paying enough attention ! I would give it 5 stars, but the DVD would NOT play on my Sony Blu-Ray, in my liv. rm. BUT, it DID play on my Sharp Blu-Ray in the bedroom. Nice to view all the workings and get useful tips ! I saw the "Le Serpentin" another gadget de Buyer makes on the DVD and ordered that thru another site after quite a search ! It Spiral cuts veggies and fruits, and will fit on NON V mandoline of same specs as the V table... I know quality when I see it, and this IS IT !! DONT CUT YOURSELF !! Lol...

UPDATE...... after months of owning this and many uses, i really enjoy using it ! It was GREAT for julienne slicing of Zucchini and beets. My wife and I made BEET SOUP, (old Polish recipe) and it cut those hard beets easily ! It does take a FIRM grip though, and the cut veggies fly out fast sometimes going way beyond the platter we put under it.. Onions are VERY easy to cut and takes VERY LITTLE pressure.. I suggest you get a big silicone mat to use under the folding legs to add to the stability of this mandoline, and to catch all your cut veggies..

I got it 2 months ago and I have purchased the 2 mm julienne, the serrated blade and the wide attatchment and I just love it. The only weird thing about it its that when I openned it, it had some sort of gel on some areas. I kind of look like silicon but I washed it off and it worked flawless. The serrated blade works nicer than the regular blade although its hard to find. I just hope that one day, de Buyer would come up with the spiral attatchment.

Unable to cut uniformly and paper thin by hand and simply wanting to save time, I'd been wanting a mandoline for years. When the first de Buyer V-Pro came out a few years ago, it distinguished itself from the rest with its V-shaped blade. V-shaped & diagonal blades (think Benriners) cut much more easily than straight perpendicular blades, especially soft produce like tomatoes, which the V-Pro's serrated blade does easily without bruising or crushing the fruit.

The V-Pro tilts to a unique ambidextrous 45 degree angle so your arm supposedly doesn't fatigue as easily, though it still requires a fair amount of force despite the blade's shape given that the mandoline is so gigantic (about 1.5 ft. long) and the whole thing was just so high on my countertop (although this can be mitigated by moistening the plate, as the manufacturer recommends). With all my weight bearing down on it, I noticed that the rubber-coated feet aren't completely nonslip, and when tilted, it still sometimes rocked. You can avoid this by placing the body flat over a bowl to catch the pieces; there is a notch that secures it over a bowl. In addition, the metal plate needs some manual guidance when being moved beyond the crank's range. You'll just have to push it up or down to get it to move into the more extreme positions before tightening the knob. The mandoline has a sturdy, mostly metal construction. Unfortunately, it won't always look like new. I've used mine just several times now, and already, the plastic is tinted orange from cutting carrots into matchsticks and the matte stainless steel looks a tad more dull than before.

I readily admit that this mandoline is complicated to figure out, but once you watch the video, it's reasonably simple to assemble & use. As other customers experienced, the DVD included with mine was also defective. However, the manufacturer promptly sent me another one, though I did notice they have the video on their website too.

I purchased the 2-mm julienne blade & long handle pusher at Kitchen Universe. I wish there were a place in the gargantuan case for the long pusher, as it houses everything else snugly.

Would I purchase this again? I think so; it's the only one on the market of its kind (at least for now), and it is well engineered and crafted. But if you just want simple slices & shavings, it's probably best to get a cheap, portable, plastic Benriner. Nevertheless, if you want one with all the stops, e.g., one that can julienne, crinkle cut, waffle cut, etc., the V-Pro is one of the best once you figure out how to use it. Just make sure you have enough room in your kitchen for it.

I love this mandoline. my boyfriend got me an inferior mandoline for christmas two years ago (an oxo good grips mandoline slicer) which i already knew wasn't highly rated and would be problematic. it would only slice about half of a vegetable until it couldn't push it through anymore, didn't glide smoothly with hard vegetables, and just tore soft vegetables apart (eggplant, tomatoes, etc). the only vegetable it worked well with was an onion, since you don't use the top of it anyways. through more research, i knew i wanted one with a v-shaped blade, and after reading the reviews, picked this one out. my boyfriend got it right this time and got it for me this past christmas. it may cost 3 times as much as my old mandoline, but it is worth it. it may not be quite as simple to change the blades as my oxo one, but it slices cleanly through every vegetable i have tried. great with carrots, onions, tomatoes, eggplants. i not longer have wasted vegetable chunks or torn up eggplant. it comes in an awesome case (though it is quite large). i have asked him to order me the long pusher and 2 mm julienne for my birthday and i can't wait to use them! i am giving my old mandoline to him to suffer with (poor guy) or to my mom who would only use it for onion rings. this is a great product! be careful, it is sharp, but it is supposed to be!
